Vegan chocolate flapjack recipe

Ever since I tried Trek‘s delicious flapjacks, I have been determined to create my own version to share with all of you. With the help of my not so secret favourite ingredient – lotus spread – which basically makes everything better, I have created these little bites of yumminess ▽▼▽▼▽.

I’m seriously so addicted to these delicious little treats and they’ve also been a big hit in my uni flat so I’m sure you guys are going to love them too! I’m off to make another batch of these babies for my road-trip home this weekend, so here’s the recipe, hope you all love them as much as I do!

Ingredients

  • 4 cups oats
  • 2 cups non-dairy margarine
  • 1 cup demerara sugar
  • 1 cup molasses sugar
  • 2 tablespoons golden syrup
  • 2 tablespoons lotus spread (optional, but SO worth it)
  • 1 bar of dark vegan chocolate

Recipe

  • Put the oats + butter in a bowl and mix together with your hands
  • Add in the sugar, golden syrup + lotus spread and mix in with your hands
  • Spread mixture into a rectangle on a baking tray covered in baking paper
  • Cook in the oven at 180 degrees for 15 minutes or until golden brown
  • Remove from the oven and leave to cool for 30 minutes
  • Using a sharp knife, slice into smaller rectangles
  • Melt the chocolate in a bowl in the microwave for  1.5 minutes or until melted
  • Using a knife drizzle the chocolate over the top of the flapjacks and leave to cool
  • Enjoy your delicious little treats!

Adopt don’t shop – a rescue story

Today I am so excited to share the first ever guest post on Jade Green Vegan; and I can’t think of anyone better to write it than my animal-loving, dog-rescuing, veggie-eating best friend – Maria.  As you guys probably know from my recent post, Maria and I have recently started volunteering at an amazing animal rescue center, after she rescued her dog Max from there just before Christmas.

I know people can sometimes be a little apprehensive about adopting a dog, but since I started volunteering I am just simply amazed at how many friendly, playful, gentle and just generally loveable dogs there are waiting to be adopted. According to this survey by the Dogs Trust,  7,058 dogs were put down last year by local authorities alone, that’s almost one dog an hour! With staffies at particular risk, I thought it would be great for Maria to share her adoption story with all of  us, to show what an amazing experience rescuing a dog can be.

Yay I am so excited to be able to:

1. Share my experience of getting my rescue dog at Foal Farm (an AMAZING shelter may I start with, that we now volunteer at every weekend); and

2. To be able to write this on my incredible best friend’s blog- it doesn’t get much better than that!

To give you wonderful readers a background, I’ll start at the beginning. As you may know, in order to start a new chapter in your life, you have to unfortunately end one, which in my case meant having to make the hardest decision in my life so far – saying goodbye to our gorgeous previous dog called Benny! I know it may sound cliché but I genuinely think we were blessed to have a dog as gentle, kind, obedient and friendly as Benny, which made letting him go even harder. Something that only other dog lovers know is that dogs are family, and so to lose a dog is to lose a part of your family. They provide the same unconditional love, only they can’t speak to tell you this, which in a way makes the bond you have with them even more special!

After a couple of months of grieving over losing Benny, I was the first in my family to realise that we could either carry on grieving (which no matter how much we hoped couldn’t bring him back); or we could give another dog the love and care we gave to Benny. My mum was adamant that this was not going to happen. However, after gentle persuasion, she recommended we visit an animal shelter (Foal Farm), continuously reminding me that we were just ‘looking’, to which I would just roll my eyes…

The next step was sitting down with Dan and Kayleigh from Foal Farm (both amazing people who devote pretty much their whole life to caring for abandoned dogs) so they could find out more about us as a family, and find a dog whose needs we could meet. We were really passionate about getting a dog who had been in kennels for some time and who had been struggling to settle. So, with that in mind, Dan and Kayleigh recommended Max (who had been in the kennels for about 3 months after being rescued from a pound who were due to put him to sleep after 7 days)! He was just under one and he had his whole life to spend with us! He was well trained (thank you to the dog team at Foal Farm for this), gentle, kind, loving, bursting with energy (which is great for when my sister – Natalie – and I go for runs and play with him), the list is endless!

We were eager to provide a home for him before Christmas so that we could spoil him rotten with presents!  The first day we could have picked him up was 22nd December, which was actually the first day foal farm was closed for Christmas! However, foal farm opened for us, purely so we could take him home that day, and I quote the dog team said “we would never close our doors, if it meant a dog going home earlier”- This I will never forget! This truly is the motto which Foal Farm carry, they care so deeply for their animals! They are a no-kill animal shelter and do everything they can to try save dogs’ lives; and for that, myself and my family are so grateful, as we never would have found our amazing addition to our family without them!

We have now had Max for over a month and considering his past, it is amazing how gentle and loving he is. I love learning new and interesting things about him every day, like the way he snores LOUDLY (that one we picked up on the first night), the way he cuddles you by jumping on your shoulders, the way he destroys every toy within 5 seconds (literally!), the way he thinks he can get a bird that’s flying 100ft above him (bearing in mind there’s one that is sitting right in front of him 10ft away).. I could go on! But the main thing I’ve enjoyed learning is even though these dogs have all had confused, troubled pasts, they all still find somewhere in their hearts to love again!

So if there is one thing I could say, it would be to foster/adopt a RESCUE dog (in particularly from Foal Farm, I’m biased- I know :))! Each dog has a unique character and I’m sure there would be one (two/three/four? Ha) that would make a great addition to your family too!

Editor’s note: I’m totally not crying right now or anything! I am seriously so grateful that Maria and her family were able to open up their homes and hearts to another dog who really needed it. Max is a very lucky boy and I know Benny would be so proud. I think Maria pretty much said it all, but if you can foster/adopt a dog, not only are you helping to save that dog but you are also opening up a space for another dog in need like Max.

Raw Vegan Chocolate and Banana Nicecream Recipe

After drooling over countless vegan ice-cream jars on instagram, I finally created my own nicecream recipe tonight, and guys, it is seriously delicious! Chocolate nicecream, where have you been all my life?! This recipe only requires 3 simple ingredients and is so much healthier (and in my opinion yummier) than dairy ice-cream. I absolutely love raw vegan desserts, as you experience all the deliciousness of a traditional dessert whilst also benefitting from lots of goodness, such as the protein and antioxidants in raw cacao and the mood-lifting properties of bananas. What more could you want in a delicious treat? So here it is, my raw vegan chocolate and banana nicecream, I think you all are going to love it!

Ingredients

  • 1 cup almond milk
  • 3 frozen bananas
  • 1 and a half tablespoons of raw organic cacao powder (I use this one)
  • Optional: berries to use as a topping

Instructions

  • Peel bananas, chop into small chunks & freeze for at least 2 hours
  • Place bananas in the blender with the cacao and almond milk
  • Blend for about 30 seconds or until smooth
  • Serve either on its own or topped with berries & enjoy!

Courgette Ravioli Recipe

Ever since mine & Matt’s trip to Mexico this summer, I have been dying to recreate one of the courses from a beautiful dinner that we had on the beach. This weekend I finally got my ass into gear and decided to make something similar, and boy did it turn out well! This meal is probably one of my favorite things I’ve ever made and the best part? It’s made entirely from fresh, natural plant based ingredients! Can I get a hell yeah?! I’m so excited to share this recipe with you all & I hope you love it as much as I do.

Ingredients (serves two)

Courgette parcels

  • 4 mushrooms
  • 6 stalks of broccoli
  • 1 red onion
  • 6 cloves of garlic
  • 5 tomatoes
  • 4 courgettes
  • sea salt
  • ground black pepper
  • oil/cooking spray

Sauce

  • 2 cloves of garlic
  • 20 black olives
  • 3 tomatoes

Salad garnish

  • 1 grated carrot
  • 4 handfuls of rocket
  • 4 baby tomatoes

Instructions

  1. Prepare the salad by grating the carrot, washing the rocket leaves & chopping the baby tomatoes into halves
  2. Slice the Courgette into long thin pieces as shown in the picture above and season with sea salt (this is probably easier with a vegetable cutter, luckily I had a mumma to help out with mine!)
  3. Cut all of the veg (broccoli, onions, mushrooms & garlic) into small pieces and the tomatoes into quarters, making sure to keep the ingredients for the parcels separate from those for the sauce
  4. Place the broccoli, onions, mushrooms & garlic that will be used to fill the courgette parcels in a pan with some oil/cooking spray, season with ground black pepper & simmer for around 10 minutes
  5. Place the courgettes in a steamer basket with boiling hot water underneath and steam for 10 minutes
  6. Place the tomatoes that will be used to fill the parcels in the blender & blend for about one minute or until smooth, then add the blended tomatoes to the simmering vegetables and leave to simmer for a further 5 minutes
  7. Blend the tomatoes that will be used for the sauce and put them in a pan with the with the garlic and olives and simmer for 5 minutes
  8. Once the courgettes have been steamed and the sauce and parcel filling have been cooked, it’s time to make the courgettioli parcels. Place the courgettes on a plate in a cross, spoon some of the parcel filling into the middle, fold the outside of the cross into the middle and turn the parcel over to serve
  9. Serve the parcels on a bed of rocket leaves, grated carrots & baby tomatoes, with sauce onto of each parcel and enjoy!

Jade Green Energiser Smoothie

Now that the Christmas break feels like a distant memory and everyone is back in their regular routine, I’m sure I’m not the only one who feels like they need a little extra boost in the morning to help them get out of the house and stay energised for the busy day ahead. Enter: the back to work energiser smoothie – aka my new go-to breakfast! Not only is this juice packed with nutrients and goodness to keep you fueled throughout the day, it also tastes AMAZING and even better takes less than 5 minutes to make, so is the perfect on-the-go breakfast.

Green smoothie ingredients

Ingredients:

2 ripe bananas

1 apple

15 grapes

1 handful of spinach

1 cup almond milk (or any other non-dairy milk)

1 teaspoon spiralina powder

1 teaspoon maca powder

Green smoothie recipe

Instructions:

Chop the bananas into small chunks

Place all ingredients in the blender

Blend for approximately 2 minutes or until smooth

Enjoy!

Top tips for going vegan in 2015

As today is the last day of 2014, I’ve been reflecting on the past year and all of its ups and downs. Transitioning into a vegan lifestyle and starting this blog is by far one of the best things that has happened to me this year. Not only am much healthier now, but I also feel so much happier in the knowledge that I am living a cruelty-free lifestyle. I feel really fortunate to have been able to connect with so many like-minded people through my blog and instagram, and have loved promoting a kind lifestyle. Over the past 6 months, I have received a lot of questions from people considering the vegan lifestyle, particularly with regards to how I made the transition and if I’ve faced any challenges. So for my final post of 2014, I thought it’d be fun to share my top 5 tips for transitioning into a vegan lifestyle.top tips for going vegan

Before I get into my top tips, I thought I’d share a funny little story with you all. Before publishing a post, I usually ask someone to proofread it for me to catch any silly spelling mistakes I’ve inevitably made. This post’s proofreader, who wishes to remain anonymous, suggested I change ‘the lifestyle’ to ‘the vegan lifestyle’ in the opening paragraph as apparently it refers to swingers (I’m not sure how they know this ;)?!) At first I thought they were pulling my leg but after a quick google, it turns out it’s true. So if you’re looking for some interesting NYE reading, just google ‘the lifestyle’. Anyway, back to my top 5 tips for transitioning into a vegan lifestyle; I hope you all find them helpful!

Visit your local health food store and get creative in the kitchen

One of my favourite things about going vegan has been learning how to cook. I used to be what you would call a ‘junk-food vegetarian’, surviving on a whole lot of pizza and pasta. However, I love that I now have a reason to get into the kitchen and create healthier and cruelty-free versions of some of my old favourite dishes. I have also loved discovering lots of exciting new health foods which has led to an improvement in my overall wellbeing – a huge but unexpected benefit of this lifestyle.

Educate yourself about the meat, dairy and egg industries

As a lifelong vegetarian who didn’t use any products that were tested on animals or wear any leather clothing, I thought my lifestyle was about as cruelty-free as they come. However, when I started to expose myself to the hidden truths behind the dairy and egg industries, I couldn’t believe I hadn’t gone vegan sooner! Understanding the cruelty of factory farming, as well as the health and sustainability benefits of a vegan lifestyle will give you a good foundation for making the transition. Personally, just doing some online reading was enough to make me want to go vegan but if you’re looking to learn more about a vegan lifestyle there are some great documentaries out there such as: Cowspiracy, Forks over Knives, Earthlings and Vegucated.

Go as slow as you need

Having been a vegetarian for the majority of my life, I didn’t find the transition into a vegan diet too difficult. However, I can imagine that for a meat eater it would be a huge change. I started with ‘vegan mondays’ that quickly turned into vegan tuesdays, wednesdays and before I knew it, I was eating entirely vegan. I think it’s really important to make the transition in whichever way works best for you, whether you’re able to cut out all animal products straight away, or whether it takes you a couple of weeks, or a couple of months.

Ask questions and do lots of research

I love connecting with other vegans, as being newly vegan in a non-vegan world can be quite daunting, so it’s really nice to chat to other people who share your passion and can offer advice. I have really enjoyed  getting to know some lovely and inspiring vegans through my JGV interview series which you can check out here. I’d also recommend reading lots of vegan blogs for inspiration on everything from cruelty-free fashion, to vegan recipes, to tips on the best places to eat out. One of my favourite sources of vegucatation is Alicia Silverstone’s website The Kind Life and I would highly recommend you check it out.

Never let the haters get you down

There will inevitably be people who disagree with your lifestyle choice and want to let you know about it. I don’t like to get into negative conversations, so whenever possible I try to briefly explain to people why I chose this lifestyle and that it works for me and then change the subject. However, if people don’t want to accept it, I’ve  found that the best way to deal with it is, in the words of the absolute goddess that is Taylor Swift, to ‘Shake it off!’

Garlic and breadcrumb stuffed mushroom recipe

In my final few weeks at uni before the christmas break I had lots of deadlines to hand in, so didn’t want to spend hours slaving away in the kitchen (read: I’d rather be procrastinating watching Revenge/The Mindy Project). I decided to create some nutritious but easy to cook lunch/dinner recipes and my favourite by far was the garlic and breadcumb stuffed mushrooms. These little bundles of yumminess have become one of my staple meals over the past couple of weeks, and I was so excited to make them for my mum on my first day back at home (she loved them too). Not only are they delicious but they only take 30 mins from preparation to plate – ideal!garlic stuffed mushroom recipe

One mushroom served with salad makes a great lunch time snack; however, this dish can also be made into a hearty dinner by serving two mushrooms with the salad and maybe even healthy skinny chips. The below recipe is a lunch serving for one but can be increased depending on how hungry you are!

Ingredients

1 portobello mushroom

1 slice of granary, seeded bread

1/4 red onion

1 garlic clove

1 table spoon garlic oil

Ground black pepper

Paprika

1 avocado

Salad of your choice

Instructions

  1. Preheat the oven to 180 degrees celsius
  2. Peel the portobello mushroom and pull out the stalk
  3. Chop the red onion and garlic into small chunks then fry in garlic oil until crispy
  4. Chop the crusts off of the bread and break the remainder into pea-size pieces
  5. Mix the bread pieces into the oil before spooning the breadcrumbs, garlic and onion into the portobello mushroom
  6. Place the mushroom on a baking tray, sprinkle some black pepper on top and cook in the oven for 20 minutes
  7. Whilst the mushroom is cooking, cut open the avocado and mash with a fork until smooth
  8. Mix some black pepper and paprika into the avocado
  9. Take the mushroom out of the oven and serve onto a bed of lettuce (/salad of your choice) with the mashed avocado
  10. Enjoy!!

Q: How did your vegan journey start? What were your main inspirations and influences behind the transition?

A: My vegan journey started in 2009 when a friend of mine started dating a vegan. At the time I was a vegetarian and had been for eleven years but had never considered veganism. This person asked me why I was vegetarian and I said “because I love animals.” He then asked me why I consume dairy and eggs if I love animals. I hadn’t ever given it thought before and started to learn about the dairy and egg industry from that point forward. It took me a few years to fully transition to veganism, but slowly and surely I did. I found it very difficult going vegan on my own and thankfully, I met my husband around that time and he also wanted to go vegan. We acted as each other’s support system and learned how to cook vegan together.

My inspiration definitely came from cold, hard facts that equally broke my heart and motivated me to become a better person and live with mindful compassion.

Q: I absolutely love reading your beautiful blog where you share lots of delicious recipes, meal guides, interviews with other vegans, and inspire people to live a positive, Sunshine life. Tell us more about the inspiration behind RoS and how you got started with blogging.

A: Thank you so much!!! I’m so happy you enjoy it! Rae of Sunshine slowly evolved while I was healing from an injury. In 2013, I was cooking onion rings in our kitchen. The oil in the pot caught on fire and the kitchen cupboards instantly went up in flames. I yelled to my husband to catch our cats so we could evacuate but they were running all over the place, terrified. I put on oven mitts and yelled at him to open the door. He didn’t know what I was about to do, but I grabbed the burning pot and ran with it. The fire burnt my face and hair while I was running and the oil spilled down my legs and feet, causing second degree burns all over my lower body. I chose to naturally heal myself with fruits and vegetables and didn’t take any medications (not even a Tylonel) throughout my healing process. The doctor wanted to do skin grafting surgery but because my body healed so well and so quickly by the plants I was consuming, I didn’t need surgery after all.

I spent a long time on the couch, not moving at all, while I was healing and came up with the idea for the blog. It actually only became a real blog in October 2014, where I now post four – five times a week.

Q: I read on your blog how you struggled with discovering the harsh realities of the egg & dairy industry when you first became vegan. This is something I, and I’m sure most other vegans, can definitely identify with. How did you transform this sadness and frustration into something positive and inspiring?

A: To be quite honest, because I realized the way I was channeling my passion was angry, rude and forceful towards the people I love. The more I tried to talk to my friends and family about what I was learning, the more I pushed them away. I know it’s just Facebook, but a lot of people were ‘unfriending’ me because of the graphic content I posted. I started to look at the other vegans I was surrounding myself with a little closer and really ask myself ‘do I want to be like this?’ From the outside looking in, it appeared to me that they were fighting the world rather than working productively to change it. I decided there and then that I needed to re-adjust the way I was getting my message out. I started to focus on the positive aspects of veganism, like the health benefits, and the success stories of animal rescues. I still feel very upset about it from time to time, which only affirms my passion, but do my best to remain positive.

Q: Going vegan has been an incredibly healthy transition for me as it has made me so much more aware of what I’m putting into my body and after a few months of a plant based lifestyle, my anemia and other vitamin deficiencies had completely disappeared. What positive effects has adopting the vegan lifestyle had on you?

A: That’s so amazing for you!! I’m so happy that you’ve had such an amazing experience! I’ve definitely had a lot of great experiences and changes, too. Aside from completely healing myself from the fire (I don’t have ANY scars left), I used to suffer from migraines and they’re gone, I can run faster and further, I can sink into yoga poses waaaaaay deeper than before, I’ve lost over 20 lbs and my skin is perfectly clear all the time. I feel healthy, my hair is longer and my overall sense of being feels balanced and well. We really ARE what we eat 🙂

Q: You recently posted on instagram how you were able to heal yourself through a plant-based diet after an accident – I’m always so amazed by the incredible power of plants – can you tell us a little more about your recovery.

A: Thank you! The recovery itself was difficult, I won’t for a moment say that it wasn’t. Because I made the decision to not take any medications, I felt every single ounce of the burn pain and it was quite awful at times. I used breathing techniques to get through it, but to be quite honest the psychological side of healing was harder than the physical stuff. I love the kitchen, it’s where I marvel at my cooking craft, and after the fire I was terrified to go near the stove. I spoke to a counsellor to deal with the trauma of it all and eventually got better. I allowed myself to sleep as much as I needed to, I drank AT LEAST one litre of green juice a day, I only ate organic, natural, whole food and I did little things for myself like put make up every day or paint my nails….small gestures to myself to allow me to feel good. When I could, I layered my legs in coconut oil, went for walks and runs and of course, came up with Rae of Sunshine!

Q: It can sometimes be tough for other people to understand when you first go vegan, but by far the most rewarding thing for me is when friends/family say they are going vegetarian/vegan or even switching to free-range eggs because of something they’ve learned from me. How did your friends and family react to you going vegan? Have any of them been inspired to make the transition too?

A: Yeah!! I love that part!! My mom is ALMOST vegan now and two of our friends are “vegan before six” which I think is great! I think those in our life are now more mindful of what they eat, whether they are vegan, vegetarian or meat eaters, they’re more educated on where their food comes from. I’ve never forced my beliefs or values onto my family and friends but have offered bits and pieces of education and suggestions for food choices. I’m really happy to see people in my life learning more about food and making the choices that are right for them and their bodies.

Q: You have so many exciting things going on, from writing your blog, to boutique vegan catering, to selling your gorgeous tote bags (I need to order one of these ASAP, they’re gorgeous)! Describe a day in the life of Rae.

A: Oh! Thank you so much!! I do have to tell you that my totes are sold out and discontinued BUT I am coming out with something even better in the new year 🙂

A day in the life of Rae – WELL…I work a full time job, so I wake up around 6:45 am, drink a big glass of water, have a shower, make an almond latte and a green smoothie and get ready for work. I usually work around 8:30 am – 4:30 pm and as soon as I get home I make dinner. In the evening I’ll either go to a yoga class, go for a run, write for Rae of Sunshine, experiment in the kitchen, reply to emails, work on upcoming projects or hang out with my husband or friends. I cater on the weekends from time to time and also take evenings JUST for myself where I don’t do anything but read or watch TV.

 Q: Being a vegan of 4 years, do you have any tips for someone who is considering a vegan lifestyle but isn’t sure where to start?

A: Yes! Start slowly…it took me a few YEARS to fully become vegan, so please don’t punish yourself if it takes you a while as well. Choose one ingredient at a time to cut out, or possibly start being vegan at home and then transition into eating out vegan. Work in steps so that you’re being gentle with yourself while moving forward with your decision. I actually wrote a blog that you can find here, How to Master the Vegan Transition.

Q: You post so many mouth-watering recipes on your blog, if you could only eat one meal for the rest of your life what would it be?

A: Oh wow, I have no idea!!! Anything with avocado or rice noodles or coconut milk! I think if I had to eat one thing for the rest of my life, it would be a Japanese Sunomono Salad with avocado slices for an appetizer and then Aloo Gobi for the main course and a raw coconut cheesecake for dessert…..that’s three dishes for one meal? Does that count?? 🙂

2 Delicious Lotus Spread Recipes

I have always loved lotus biscuits (you know, those little biscuits you get given with coffee) so when I found out that Lotus had brought out a spread I was beyond excited! If, unlike me, you have more self respect than to sit at the back of your lecture theatre dipping lotus biscuits into lotus spread, then I’ve created 2 mouth watering recipes for you to enjoy this delicious spread:

1. LOTUS SPREAD SMOOTHIE

Ingredients: 3 bananas, 1 tablespoon lotus spread, 1 cup almond milk & one handful ice.

Instructions: chop bananas into chunks, place all ingredients into blender, then blend for one minute or until smooth & enjoy!

 

 2. LOTUS SPREAD CUPCAKES

Ingredients:

  • 3 cups self-raising flour
  • 2 cups almond milk (/other non-dairy milk)
  • 1 cup brown sugar
  • 1 teaspoon baking powder
  • 1 tablespoon egg replacer
  • Lotus spread

 Instructions:

  1. Preheat the oven to 180 degrees
  2. Mix flour, almond milk, brown sugar, baking powder and egg replacer together
  3. Cook in the oven for 15-20 minutes or until brown on top
  4. Leave cakes to stand for 10 minutes
  5. Decorate cakes with lotus spread
  6. ENJOY!
